Okay so it’s not what you think… this isn’t about a date that I went on but a date that I created. I made the most incredible stuffed dates in the whole world! They are so perfect for Valentine’s Day, but really you need to make them any time of the year.
Chocolate-covered strawberries are delicious — I think we can all agree, but they are overdone. They are cliche... but a yummy cliche. The chocolate-strawberry flavor is really unmatched, so rather than dipping strawberries, I mixed them in a creamy cashew butter and stuffed them in the juiciest dates on the planet, drizzling them with chocolate. Mind-blowing, I know! You will thank me after your first bite.
I used Artisana Organics creamy organic cashew butter which is made with raw organic cashews and nothing else. (Order HERE using code KrystensKitchen). There is no added sugar in this recipe (a little teeny-tiny bit in the chocolate) because they simply don’t need it. The freeze dried strawberries and dates are sweet enough. The dates I love are from Rancho Meladuco, and I can’t recommend this company enough. You haven’t had a real date until you’ve tried them.
RECIPE:
Dates (about 10)
1/2 cup cashew butter
2 Tablespoons coconut flour
1 teaspoon vanilla
1 Tablespoon almond milk
1/3 cup organic freeze dried strawberries
1/4 cup melted chocolate
Slice open dates and remove pits. Mix cashew butter, coconut flour, vanilla and almond milk together. Add in crushed freeze dried strawberries. Spoon cashew mixture in each date and pop them in the freezer for 10 minutes. Remove dates from freezer, drizzle with melted chocolate and top with extra freeze dried strawberries.
You won’t want to eat one but if you do, it’s okay because it will be THE BEST VALENTINE’S DATE EVER!
